I would like to take a min and give a recipe that I tried out on some duck.
I'm privileged to have a good friend that has his own breader. And going to enough of his fish frys over the summer I decided to try something fast and easy. Below is a recipe that I went with and it turned out so good.
Shortys fish and fowl breader is made here in Va, comes in 3 types mild, medium and spicy. I have used all three and turned out amazing.
Take duck breast and soak in milk for 8-10 hours
Cut into small slices and batter them with Shortys fish and fowl breader (shortysbreading.com)
Fry in hot pan for 2 min
You can serve with A1 or ranch as a dipping sauce.
Nash and Shorty are good friends of mine and I'm glad to tell everyone about their breader.
If your interested here are some locations you can get it Green top sporting goods Richmond,Va, fish'n pig restraunt FarmVille,Va
Or go online shortysbreading.com
