Duck Recipe

I decied to do something different with my fowl cuisine last night and the results were delicious so I thought I'd share.

I started the process over the weekend. I thawed out some mallard breasts in water. I changed the water a couple times to let the blood drain. Monday night I cut off all the silver skin and tough parts so I was left with just meat. I pounded them flat like you would chicken fried steak and marinated in Franks Wing Sauce overnight. Last night I took them out, dipped them in egg wash and then bread crumbs with seasoned salt before pan frying over medium/high heat for about 3 minutes each side. They were still just slightly pink when biting into them. I served them up on toasted buns with mayo and pickles. Let me tell you guys this made some DELICIOUS sandwiches. My wife is already asking me to make them again. Enjoy :thumbsup:

I do similar with flour seasoned with garlic powder, onion powder, salt, pepper, and some Tony's.
