alittle twist to the bacon wraped grilled breast. take your big ducks breast fillets and butterfly them. stuff them with boudin. ( i prefer crawfish boudin) top em off with a slice of pepper jack cheese, jalapeno slice(fresh) and wrap with bacon. since breast are large i wrap the entire breast with 2 slices of peppered bacon north-south and east- west covering the whole fillet. cook med rare. i promise you its so good its worth the little extra work. serve with grilled asparagus and wild rice..... and dont forget a glass of shiraz..
when you dont see any ducks,settle for a tree hugger.
