Duck or goose tenderloin Marsala...Awesome!

We save all the tenderloins out of every bird we breast out. We package them in quart sized bags, about a pound of meat per bag just for this recipie........We make duck tenderloin Marsala with 'em and it's awesome!! Use this recipie From Emeril Lagasse:

We add 2 pods of roasted garlic to it for a twist... Serve with a side salad, loaf of french bread and a good bottle of Amarone wine.

Made it last night...... :thumbsup: :thumbsup: :thumbsup:

Only change that I made was that I used whole pounded breasts and served it over egg noodles.

Inda I know you don't like me but just one question i was unaware birds had tenderloins. Just thought they had breasts and legs like women. LOL

What ever gave you the impression that I don't like you? And the terderloin is the muscle under the breast against the bone.
