Changing rim size

I have 2001 Silverado with 245/75-16 tires on it can I get away with going up to 255/75-17, what will it effect? I know I would have to buy 17 inch rims but I was planning on buying a spare set so I can run off raod tires during the hunting season and street tires in the summer. The reason for the size change is I found a good deal on BF Goodrich Mud Terrains T/A for $100 a tire new.

Your speedo will be off very slightly (read a faster than you are actually going) but since the overall tire diameter difference is only an inch or so you probably won't notice it.
