I save the left-over corn on the cob from crawfish boils. After slicing the corn off the cob with a knife, I freeze it in a zipper bag.
Make your corn bread following your preferred recipe (I use the one on the back of Aunt Jemima corn meal) but add 1/2 cup of the crawfish boil corn. Goes great with red beans and rice.

If you want it hotter/spicier; add more corn.
