I can't remember where I got this recipe from but I have been using it for a number of years and it's all I use for my jerky these days.
5lbs of ground goose or duck (or mixture of both)
8 jalapeno peppers ground with the meat (cut in half and remove seeds first)
1 cup soy sauce
1.5 Tblsp garlic powder
1/2 cup brown sugar
1/3 cup Famous Daves BBQ Sauce (or your choice of BBQ sauce)
5 Tblsp salt
1 Tblsp onion powder
1.5 Tblsp ground black pepper
Mix all ingredients very well and cover in a container to leave in the fridge over night. The next day, squeeze through a jerky gun onto your dehydrator trays and cook for 4-6 hours depending on thickness.
