A buddy gave me 5 pounds of frozen snow crab legs. I took a pound and simmered them on the grill. When it was time to eat, all of the meat was stringy and came apart. Did I cook it too long, too short. Not enough heat, too much? Never cooked crab legs myself.

too long prepared or most likely the storage period in the freezing was too long. I once cooked shrimp. Fry them in a frying pan and they became fibrous and rubbery

Steaming them is best.
On the Egg I’ll cook what ever then put the crab legs on, cap it off and will steam them.
Microwave will work or put them in a pot like a shrimp boil.
