Thought I'd post 2 of my recipes that always seem to be fan favorites. I'll keep it simple...I make this in bulk, so I'll try to cut it down.

JalapeƱo Cheddar Diver Sausage
Equal parts duck meat and pork shoulder, about 5 pounds total
1 medium onion, minced
2 tablespoons minced garlic
A couple of nice pinches of salt
5 jalapeƱos, minced with seeds
1 pound shredded cheddar cheese
half an ice cold beer (drink other half)

I case these about the size of a bratwurst. Throw them on the grill and serve in a bun. I like spicy mustard and grilled peppers/onions with mine.

Hot Paint Goose Jerky
Thinly sliced goose (like any other jerky) about 5 pounds total
Marinate (4-6 hrs) in half a bottle of liquid smoke and enough soy sauce to cover the meat
In a food processor combine:
Half a bottle of Sriracha
2 cans whole smoked chipotle peppers in adobo sauce
8 oz. carrot juice
A couple of nice pinches of sugar
2 tablespoons minced garlic
1/4 cup balsamic vinegar
Blend together and make your paint
Drain your goose meat, apply paint, and dehydrate.

Me and a buddy who enjoy the spicier side of life came up with this recipe while at work.We called it paint because the first time we made it we brushed the hot paint on. The newer technique is to toss it in a bag and then paint the remainder when on the dehydrator. You get the salty, then the slightly sweet only for a second, then smokey heat at the end.
