I marinated them in lemon and orange juice with the addition of truffle oil and soy sauce and then you can grill, or bake in the oven

My preferred way for goose legs is marinated with citrus (lemon, grapefruit, orange, etc.); woodland (truffle, rosemary, etch) or asian and then confit in goose fat.
Keep them in a jar and eat them when you feel like. They keep well and for long and you can even give them a blast in the grill/BBQ for an added charred taste

How about a modification of Duck Confit sous vide, using the goose leg instead. Delicacy in France.
