The bill is a dead giveaway and the yellow eye gives you the sex. Hen would have a brown eye. Only when they get truly prime so they get a clean white breast.

I've never had one that didn't taste good, in the Miss Flyway. I believe they are mostly vegetation and bug eaters in our flyway, we always shoot them in marshes where there are no fish. I would guess like any duck, if its on a big lake eating fish then it probably doesnt taste good
