on the last day of the season i shot two mallards. I went to clean one of the birds and discovered it had rice breast. I have heard it is safe to eat but after seeing the meat and doing a little research, it did not make it into my freezer. I hate that the duck went to waste but i just couldn't stomach the thought of eating it. What does everyone else do with ducks with rice breast. How common it is(this was my first).

Nah, more often than not, there's just a few here and there. Many times you probably wouldn't even see it unless you slice the breast into strips. It just depends on how heavy the infestation is and how closely you're lookin'... :biggrin:

It said that it is non fatal. Non fatal to us Im assuming but what about the duck? I cant see how that wouldn't effect
the bird. For each piece of "rice" in the breast there should be muscle there instead shouldn't there be?

If you knew the parasite load of most wild animals, you would never eat any of them. I had some pintails and wigeon with Rice Breast. Filet out the breasts and cooked them with the rest in a pot of Uncle Bens. No one knew the difference. :tongue: By the way, your average deer has tapeworms, roundworms, lungworms, stomach worms, various insect larvae in the meat, the list is endless. Cook the stuff properly and you won't have any problems.

i can second that ^^^^ im a certified chef. i could make you guys ralph in seconds with the education i have of food.. my favorite is cod and wild salmon nno!:

i could also shame any organic-ist from here to mexico with the same education

So you have found alot of worms in cod have ya? :wink: I worked on the water front when I was a kid.
What about the salmon?

i cant remember how many times ive gotten a wild salmon in the resturant and while cutting it find a pinky size hole starting at the lower stomach and snaking its way into the thick flesh. i usually find the parasite track when i run my hand over the flesh and a pink looking pus pushes out of a crack in the flesh. cut into it and like termites. channels filled with pink pus everywhere. once you find the worm it curls up like a armodillo. i wont serve that but some will send it to your table cooked medium. eat up boys! thatll cost you you $29.95 thank you very much, hope you have a toliet near by and no exsiting immune defencient dease.
